Vinification
Grapes are fed into the press using a system that minimizes berry breakage. Only the “flower” must is used, which is the noblest part of the must obtained from draining and very soft pressing. Fermentation takes place at a controlled temperature in stainless steel tanks with selected yeasts and can last 7 to 15 days
Refinement
The resulting wine is kept on its lees for at least 4 months. After Draught, the bottles are placed in special baskets where they remain for at least 24 months at a controlled temperature until disgorged.
Commercial release takes place after an additional 2 months of bottle ageing.
Organoleptic notes
Bright yellow color with a fine and persistent perlage.
On the nose, the bouquet is complex and fascinating, releasing both floral aromas such as magnolia blossom and jasmine and tropical and white-fleshed fruit. We find in it the typical hint of baked goods of the Metodo Classico.
On the palate, it is full-flavored, fresh with an elegant and refined creamy mousse that enhances the wine’s aromatic depth and length on the palate.
Pairings
Perfect as an aperitif, it pairs beautifully with fish-based starters, shellfish, and mollusks.
Excellent throughout the meal, especially with seafood or vegetable-based first courses, fresh cheeses, and egg dishes.
