Vineyard
The breeding system is by simple bow. Planting density is 4,000 vines per hectare and production is about 3 kg. per plant. The terrain is of moraine type located south of Lake Garda, with the rows facing north-south. Harvesting is by hand.
Vinification
Freshly harvested grapes are pressed directly. Pressing is done in a soft manner, so that only the richest and most valuable part of the must can be obtained, the so-called must flower. It is fermented at a controlled temperature for the duration of the process, which is about 7 to 10 days.
Refinement
The claret is kept in contact with the fine lees through batonnage for about 4 months. After bottling, it is left to refine for about a month in the bottle before being marketed
Organoleptic notes
A bright pink wine with hints of purplish highlights. On the nose there are scents of rose petal and lavender. In the mouth it is pleasantlynte delicate with a pronounced savoriness typically conferred by the moraine soils located near Lake Garda. It is fruity with notes of pink grapefruit, black cherry and red currant.
Pairings
An easy-drinking wine that goes well with a variety of fish and vegetable dishes, excellent as an aperitif and also with pizza.
